Gut Coach Cheryl’s Blueberry Smoothie!

When embarking on an elimination or autoimmune eating plan, my clients often struggle to find satisfying and filling breakfast choices. Most people are used to eating a refined carbohydrate and dairy-heavy first meal of the day, (think cereal, pancakes, etc). When you are suffering with chronic digestive problems, these are often the foods we eliminate for a time as they are typically big offenders and cause so many digestive discomforts. Fortunately, a properly designed smoothie is a quick, filling alternative and packs a gut-healing and nutrient dense punch…the perfect alternative to a typical nutrient-poor, inflammation-promoting breakfast.

My Gut Nourishing Blueberry Smoothie

(Serves 1)

1/4 cup frozen organic blueberries: Full of prebiotics, which feed the good bacteria that we want to encourage in our gut

1/2 cup coconut cream: Reduces inflammation and contains antimicrobials that kill yeast and bad things in the gut

1-2 T collagen powder: The microscopic folds in in the gut are made of collagen. The amino acids in collagen heal damaged tissue in the gut and can help with various digestive disorders

2 T Unsweetened Coconut Milk Kefir: Contains powerful anti-fungal, anti-bacterial and anti-inflammatory properties to soothe your digestive system. This probiotic powerhouse helps colonize the digestive tract with beneficial bacteria. You can substitute unsweetened coconut milk yogurt, if needed.

1/2 Banana: Packed with fiber (to aid in digestion) and contain electrolytes that are often low, especially if you deal with loose stools often

Add these ingredients to a high speed blender along with a sprinkle of vanilla and/or cinnamon and 1/2 cup of ice.
